Souffle Japancakes

From market stall to containership venue (you’ll still find them at Eat Street every weekend) and now not one, but two permanent locations, Souffle Japancakes is on a mission to bring fluffy souffle pancakes to every corner of Brisbane—and our bodies are ready. Dishing up some of the wobbliest, jiggliest stacks of pancakes you’ll ever eat, this tiny new hole-in-the-wall cafe in Greenslopes is Souffle Japancakes second permanent venue (you’ll find their first in Westfield Chermside), but it’s got a unique drawcard not available elsewhere—gluten-free souffle pancakes. 

Yep, gluten-free foodies, your day has finally come—these guys even have a dedicated pancake grill just for their gluten-free version, so you can finally dig a fork into the trend (sorry coeliacs, but there’s still a cross-contamination risk in their very small kitchen). Whether you get them sans-gluten or not, toppings here include the likes of crème brûlée, berry cheesecake, matcha and Oreo, not to mention savoury creations like eggs benedict and smoked salmon and avo. 

There’s a handful of tables inside and out where you can dig into your chosen stack, or their other treats like crepes and mochi gelato, with coffee and matcha lattes to pair them with. They’re only open Monday to Friday for now, with plans to open on weekends further down the track, so stay tuned.
